Dark pu-erh mixes with bits of dark chocolate make an exceptional dessert tea that is low in caffeine. The base of this tea is shou pu-erh, meaning cooked; the tea leaves are lightly fermented using a process involving heat and moisture, also the addition of beneficial bacteria. This fermentation process removes much of the caffeine of dark puerhs. The taste is smooth and full, with no bitterness or astringency.
